Classic Choc Chip Muffins

  Makes 5
 

1 cup wholemeal self raising flour

1 pinch of salt

1 pinch of ground cinnamon

1 teaspoon baking powder

⅓ cup milk

⅓ cup extra virgin olive oil

2.5 tablespoons honey

1 teaspoon vanilla extract

½ cup dark chocolate chips



  1. Preheat the oven to 180 degrees celsius

  2. Add the extra virgin olive oil, milk, honey and vanilla extract in a large bowl and stir

  3. In that same bowl add the wholemeal self raising flour, baking powder, salt and ground cinnamon and fold until combined

  4. Add the dark chocolate chips and fold until combined

  5. Using 1 tablespoon, measure the mixture into lined muffin cases

  6. Bake for 25-30 minutes or until a skewer that is inserted into the centre comes out clean

  7. Leave in the pan for 5 minutes and then transfer to a wire rack for 10 minutes to cool
